Ethiopia Danse Mormora
Danse Mormora is located about 5 kilometres from the town of Haro Lebetu, and the farmers grow coffee in fertile clay soil at high elevation. Typically farmers in this region don't have access to and therefore do not utilise fertilisers or pesticides in the production of coffee.
Guji is a beautifully forested area in southern Ethiopia. Before the early 2000's, this region was considered part of Sidama, but has since become its own region. The people of Guji grow coffee gardens at very high altitudes in the rich red soil of the highlands, setting this coffee's profile apart from neighbouring regions. These smallholders deliver their coffee to washing stations to be sorted and processed together.
The process of producing Washed coffees in Ethiopia will vary slightly from washing station to washing station, but generally speaking the coffee is picked ripe and de-pulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. The coffee seeds will be spread on raised beds to dry for 5–15 days, depending on the weather.
