El Salvador Finca Himalaya

Finca Himalaya is a 60-hectare farm owned by Mauricio A. Salaverria. His farms are planted with Bourbon, Pacamara and Maragogype varieties, as well as shade trees. The Anacafe 14 variety is a naturally occurring cross of Pacamara and Catimor. The volcanic soil and use of shade creates a very hospitable environment for the coffee, and Mauricio has developed his own systems for processing.
This coffee is part of the Farm Select Program, all of which come from individual farms.Participating in the Farm Select Program allows coffee farmers to directly receive monetary impact from the quality premiums paid for these coffees.
Natural-processed specialty coffees are something of an experiment in El Salvador, but they are increasing in popularity. The coffee is generally picked ripe and sorted for quality, then placed on raised beds or patios to dry for a month or more.
Ahuachapan is in the Northwest Corner of El Salvador, bordering nearby Guatemala. This region is often considered the first place in El Salvador where coffee cultivation expanded in the mid-nineteenth century.
