This lot comes from smallholder farmers in the Choriso district of Yirgacheffe, within Ethiopia’s Gedeo zone. Farms here are small, often less than a hectare, and are typically semi-forested, with coffee grown alongside other crops. This intercropping approach supports soil health and provides natural shade, helping to slow cherry development and enhance flavour density.
The varieties grown are traditional Ethiopian heirlooms, primarily Dega and Kurume, known for their nuanced and expressive profiles. Cherries are selectively hand-picked at peak ripeness and delivered to the Haroberdame washing station. After sorting, they are dried as whole fruit on raised African beds for approximately 20 days.
