The Colombia is produced by smallholders in rural areas surrounding the Galeras Volcano in Narino. Coffee growers from this region are well known for producing some of the finest washed coffees in Colombia. This coffee is fully washed then undergoes a 20-25 hour fermentation and then dried on parabolic dryers with controlled temperature to ensure an even dry and reach the right moisture level.
The Ethiopian coffee is grown by smallholder farmers in the Moki community, who are part of a larger network of producers in the Gedeb district, just south of Yirgacheffe. These farmers work with facilities like Chelbesa for processing, ensuring the beans are carefully handled to maintain quality. The natural process involves drying the coffee cherries in the sun, which concentrates the sugars and flavours in the bean, leading to a sweeter, more complex cup compared to washed processes.
