Colombia La Leona
Martha Arcila produces this coffee at Finca La Leona. She is a third-generation coffee farmer who inherited the farm from her father 20 years ago. In the past, Martha focused on volume, but since 2019, she has dedicated herself to specialty coffee production. This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Although the region, Quindio, offers prime conditions for coffee cultivation, the higher ambient temperatures pose challenges for fermentation during processing. Consequently, this coffee lot is stored in airtight bags and submerged in water tanks to ensure a controlled environment for fermentation. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved. This meticulous process yields coffee with an inviting sweetness, a vibrant acidity, and an enhanced cup profile as a result of the small yet impactful practices in the harvesting and fermentation stages. Overall, Martha's hard work and dedication have paid off, and she aims to build long-term relationships by offering high-quality coffee with two harvests per year from Finca La Leona, located in Armenia, Quindio.
